Cashew Nut Crusted Chicken |

Ingredients
1 kg chicken breasts (skin off)
1 cup cashew nuts
1 cup dried bread crumbs
½ cup grated parmesan cheese
1 egg
½ cup milk
¼ cup flour
Method
Place the cashew nuts into a food processor and blend until a fine crumb is obtained. Add the parmesan and bread crumbs into the food processor and briefly blend with the cashews.
Prepare a crumbing station with the flour in one tray, the egg and milk whisked together in another tray and the cashew crumb mixture on another tray.
Lightly dust each chicken breast with the flour, then dip each chicken breast into the egg wash and then add an even coating of the cashew nut crumbs.
Oven bake the chicken breasts for 20 minutes at 180 degrees.
