Ingredients
4 single chicken breast fillets, skin removed
2 teaspoons oil
15g butter
200g prepared basil pesto
250ml thickened cream
Method
Heat the oil and butter in an oven proof dish; add chicken and sauté until chicken is browned all over.
Combine basil pesto and cream in a clean saucepan, simmer, uncovered, for about 5 minutes until slightly thickened. Top the chicken with the creamy pesto sauce, and bake, uncovered, at 180°C for about 10 minutes or until chicken is just cooked through.
Serve chicken fillets with creamy pesto, shredded green vegetables and parmesan roast potatoes.
