Whole roasted chicken with Preserved lemon marinade and sun-dried tomato seasoning
Ingredients
1 whole size 14 chicken
Marinade
2 Preserved lemons
2 tblspn olive oil
1 tspn salt
1 tspn cracked pepper
Seasoning
½ cup semi sun-dried tomatoes
2 cups fresh breadcrumbs
1 tblspn fresh oregano chopped
1 egg
Salt
Pepper
Method
Finely slice the zest of the preserved lemons and add the olive oil, salt and cracked pepper. Liberally rub the marinade over the whole chicken and allow to marinate for 1 hour in the fridge.
To make the seasoning, coarsely chop the sun-dried tomatoes and add to the remaining ingredients. Mix thoroughly to form a semi solid dough. Firmly pack the seasoning into the cleaned cavity of the whole chicken marinated chicken.
Pre heat oven to 180 degrees and roast the whole chicken for 1 ¼ hours. Cover the chicken for the first ½ hour and then cook uncovered for the remaining cooking time.
